What if I troll pick and carry my team?

A little while ago I decided to play ap Varus ADC on a full squishy AP team against a team full of tanks. Long story short, we lost but I ended up dealing the most damage by far out of both teams. There was no way were gonna win with our team comp. Should I get reported?

For what? As long as your pick works and does't intentionally ruin the game it should be fine.

The term troll is thrown around very loosely these days because people get too angry too quickly.

AP Varus isn't troll. He has legitimate scaling to support the build. Trolling would be like going AP J4 so you can max the damage on your flag, or AP Graves so you can get maximum damage on your smokescreen. Game mode is also a factor and along with if you're purposefully causing distress towards a player or are antagonizing them. This would include examples such as playing Tahm Kench and devouring your allies only to throw them towards the enemy team, or playing Anivia/Taliyah and using your wall to block off an ally.

Have seen legit success with AP J4 in ARAM with some spicy flag ludens spam, although that's probably more the exception than the rule.

Don't think picks/builds of any sort are inherently trolling, although sometimes a bad idea, but bad ideas are a skill reflection and you can't report someone for being bad at the game. If some poor soul thinks AP graves is the future, they're free to do so, but their 'punishment' will be sinking to the depths of bronze mmr rather than being banned or whatever.

Those who are actually picking poorly with the intent to troll, tend to clearly troll in other ways that are more clear cut (inting/griefing) and it's that sort of thing that gets reports that end up being actioned by riot.
