Why?

I just don't get it.

I play someone like GP, and have ~100k mastery points on him, but have my ass handed to me despite doing everything in my power to win. I pick LB or Kat, both of whom I have never played more than once, and absolutely dominate. I play an easy ADC like Sivir or Jhin, and I just stomp people with automatically aimed attacks. I play Graves or Ez, who have real counterplay and skillshots, and just have my ass handed to me half the time.

Why?

Why are easier champions just so much stronger than more complex champions, and why can I win EASILY with a champion I've never played when I have trouble with a champion I've played hundreds of times?

I don't get how this is balance in any way.

Pick a new champion.

He's been nerfed so many times (because whales don't like being forced to dodge things) that he's just useless now. His damage is pitiful, he has no laning power anymore, he can't bully, he has no peel, his kit is very telegraphed and avoidable... just don't play him. He's a super fun champ, but as with all fun champs, he's pitiful.

Just pick up Nasus and Trundle, and you'll win 90% of your lanes.

Generally, since this is a fucking F2P cash grab and all, the easier a champion is, the stronger they are. So, learn to stay awake while playing someone as boring as Nasus, and you'll carry most games, since he's just absurd. Play Kat or LB and mash buttons and you'll win. Play any champ who focuses on auto attacks, and you're basically guaranteed to climb.

Don't listen to him. The guy's a regular troll here, constantly complaining that League is a free game (as you can see in his response)
