Why are champions like Zed immediately buffed the moment they fall out of favor?
But not things like Cass or Zyra ect? I've saw occasional zeds but lately it's been pretty much nothing but zed

Because champions like Zed and Lee have a large playerbase, and Riot considers it to be "fun" when they dump on people.
LC$BIGPLAYS are the reason.
Because Riot is playing favorites and the balance team as of late is a fcking joke.
Because LC$BIGPLAYS. Assassins make the "big plays" because they kill stuff, and kills are exciting, even if it's complete bullsh*t with almost no counterplay.
Everyone says this term is "overused", but that's just an excuse they use when they don't want someone nerfed.
The thing that bothers me the most about Zed is that once you're at 80% or lower as a midlaner, all he has to do is basically ult you and it's gg. But hey, it's not like he has energy so he can continuously spam Q/W/E to get you there. Most mana based champions are at a disadvantage against him, as he can still fairly easily farm, spam poke and ultimately get easy kills, while said manabased champions have very limited resources and sustain.
Even if you get a gank while you're at 80% or lower, he can either escape (W) or ult and take one with him - and chances are, he can still escape after a kill due to "do I want to go to W or R"...
I really feel for most squishy midlaners, but luckily I main Malzahar, and I enjoy crushing most Zeds. Zed ults? Oh golly, let me just Q behind me, pool, aids, ult and maybe ignite for good measure. Only 2 problems are as following:
A. When(if) he gets double kills botlane because either bot didn't see/respect my pings, or I just killed him and he went straight there. Or, you know, I forgot to ping, sshhh.
And/or
B. When you face the skilled high plat+ player who builds QSS/Mercurial (because high AD, lifesteal and the almighty CC/dot cleanse makes it soo annoying for poor AD champs to buy this almost useless item), maybe followed by maw if deemed necessary. In those scenarios, you have to be better than the Zed, and bait out the QSS active before being able to win - and that's as a hard counter.
Example: Zed ults in, you Q/W/E, fucking wait till you see the almighty release of the white bubble, likely due to the silence, and then you ult his sorry ass. You might even still die after this, depending on timing, cause all he needs is a rotation of abilities and a few AAs - after that you better pray you had money for a zhonyas. Also, worst case scenario: He's a fucking Jedi, and doesn't use QSS active till you actually ult - in which case you might as well try the good old southpark "duck and cover". :P
Luckily, these "skilled QSS players" are rare and only experienced one Jedi in my time so far - but he was consistent, so it is just a matter of skill.
Lastly, check Zed's winning % at 125+ games played: http://champion.gg/champion/zed Which leads to "but I had to be good at this champion to win alot", which was the excact same case for malzahar, and he got nerfed in a stupid way - even though, I'll admit, he's far easier to pick up, but in the end just as hard to master, because kit is more limited, making mistakes punished harder. Any coordinated team, specially jungler, is a nightmare for Malz.
Anyways, so why does Zed always get away homefree from any true lasting nerfs? Why did they buff so many things at once instead of nudging him "back in place"? And why, of all things, did they they buff his ult...

Because Zed's "Fall out of Flavor" was a 43% winrate and one of the worst three champions in the game. Cassiopeia and Zyra might be unpopular but please remind me the last time they were that bad and received nothing?
At least I don't see Lee Sin on both teams every single game. Oh wait...
There are a few champions who, no matter how they're buffed, or why, suddenly 80% of the playerbase "mains" them for a week or two. Personally, this annoys me more than the actual balancing of said characters (Zed, Yasuo, and Vayne, to name a few).
Cass and Zyra are more binary than Zed. A buff will help them ALWAYS win, whereas a buff to Zed helps him to not lose as much.
Because someone needs to kill 
Occasional Zeds, nothing but Zeds. I have no clue what that means.
