No, that's not the issue.
Look, talking with you is hard because you are convinced that you are correct and are unwilling to listen to answers that contradict what you believe.
For builds, I recommend going to champion.gg. They will show you what people with the highest winrates are building and what the most frequent builds are. Builds are slightly situational, but it's a good start.
Regarding Nasus/Quinn. Quinn is unique in that she has the ability to deny Nasus from stacking for a very long time due to the blind on her Q which makes him miss stacks. She can harass and punish him with her range as well. Nasus should not win that lane or accumulate that many stacks. But he did, because Quinn misplayed. That does not mean "Quinn is bad" it means that they misplayed the lane and fed out of control (which is what happened). Nasus actually didn't even have that many stacks (due to his low CS) and was mostly just using his massive amount of kill gold to buy damage (Gauntlet + Hydra). Nasus does eventually become very powerful, but 25 minutes is not the height of Nasus's power. Unless he is fed 18 kills, which he was.
I also think you should look at what exactly your comp was lacking compared to theirs and why the loss was pretty obvious from the beginning.

Extremely low initiation. Who initiates for your team? Kat can't. Quinn can't. Nidalee can't. Varus isn't exactly great at it. Thresh hooks? Maybe, but that's not exactly high tier initiation. Your team doesn't really have a way to get in.
-
Extremely low CC. In terms of hard CC, you have only Thresh's abilities and Varus's Ult. Nid brings none, Kat brings none, Quinn only has soft CC. So you have no real way to lock anyone down.
-
Near zero frontline. You have no one who can take a few hits outside of an extremely poor Thresh. He doesn't have the gold to frontline. Pure damage Nid can't frontline. Quinn can't frontline. Varus is a nonstarter. So you had absolutely no frontline.
I am against the tank meta, but I think it's unreasonable to expect having no tanks to turn out well against a fairly balanced team comp. Look at what their comp brings to the table.
Alistar- Tanky frontline, can initiate and CC lockdown.
Mundo- Tanky frontline, can soak damage and be obnoxious.
Wukong- Fighter initiator. Can initiate with CC in teamfights.
Nasus- Fighter frontline, can soak damage and due to massive gold lead from kills, can deal it.
Graves- Ranged burst damage. Did a ton of damage.
Your team has no real plan for teamfights. There was no way you were going to win on comp, unless you were massively better than your opponents.
Tanks have a place in the game. And trampling teams that have huge weaknesses to engagements is something they can and should excel at. It's not fair to say "oh we should entirely get off scott free by not having anyone who can frontline" and then QQing about tanks. Your comp was awful.
