the problem is that is not even close to the "random human warrior 56" we have like 6-7 warrior champions out of 120..
And the last one was darius you know when darius was released? 2012..for god sake...that 5 years...in the last 5 years we see weird looking robot/anime/animals/what ever champions...
So for 5 years riot didnt even consider making a champion like that and i am pretty sure its not my liking..a human is well know being..
and i didnt mention leona/sejuani because they were released before darius..darius was the last human warrior then they make this pitty warrior yasuo but this guy is more like anime rather than warrior...which even if you take yasuo as warrior yasuo was released 3.5 years ago..so even if you put yasuo as last check point it still 3.5 half years without a warrior
Below is the entire list of strictly human AND mostly physical fighters in the game, not even counting former-humans or half-humans and whatnot. This is selected on the basis of that they fight with minimal or medium amount of assistance from magic or other means, and focus more towards combat prowess derived from physical strength and technology
The list is defined like that because you have to pay attention to the fact that this game is a high fantasy where the rosters also contain many of monsters, fairies, immortals and gods, and as such it's just very unlikely to have human characters physically powerful enough to be on somewhere comparable to those other character's levels enough to be put in the same game; this explains their understandable lower count when it comes to "purists" who only ever uses human's physical strength without any aid. In fact, even within your original list, only about 3 of them actually use entirely physical means of combat (maybe even just 2, because one of them is a corpse possessed by a very powerful spirit so their body may be enhanced with magic), the rest all have magical or unknown elements of combat mixed in (Trynd's temporary immortality, Garen and J4 both seem to use either magic or enchantment based magic, Olaf can call thunders and imbue his weapons with lightning).
The list also includes tool-based physical fighters, those who use tools as opposed to just brawns. These people are typically ranged or assassin characters but not always.
So the list boils down to:
(both before and after he became a zombie)

(Remember I did not include former humans, people who can hardly be recognised as humans, hybrids etc or otherwise the list would've been a bit larger as well). I also did not include any mages and other magic users as per the request of this list.
That's 33 champs there. 33 out of 137 (I also may have missed a couple here and there), it means there are 24% of the roster being human physical fighter alone. That's not a bad percentage of representation when we also have hybrids, other species, gods, elementals and whatnot in the roster, as well other more magical heavy class fantasies, to mind as well.
...........
As I was saying,
"Riot would generally want to fulfill and explore other kinds of design fantasy, races LoL, and champion classes instead of just making sword&shield human #56. And since the range of power levels available is incredibly wide, going from your fighting general all the way to the level of gods, ofc they can't just be focusing on muscle human warriors who fight using his trusty sword or something along those lines."
