I appreciate your advice and I'll try and take advantage of it in future games, but I still feel that Nunu is lacking in real counterplay as much as he is lacking in interesting play patterns.

I agree that Nunu is an outdated champion and in a pretty bad spot, but it's not true that he's got no weaknesses.
He's terrible in solo lanes and he's not that great in the jungle either.
If he spams snowball he goes oom very fast unless he's constantly stacking his passive, in which case you can force him away from your creeps so he can't keep it up.
Took advantage of this, in the end it didn't matter - he caught up easily later. And it's not as pronounced as you claim, because he can make use of manaflow band as well.
He has absolutely abysmal waveclear so he's easily pushed under tower and loses cs.
I'm not about to expose myself to ganks as an immobile Artillery mage. That would have been far too risky.
None of the keystone runes do anything significant for him.
Arcane Comet works great with his snowball, the point and click makes it undodgeable.
If he's not maxing consume its sustain is comparable to GP sustaining with W.
I have no idea what he was maxing, but I know for certain that none of my poke stuck or forced him out of lane.
His Q stacking passive does not work in lane as it needs to be stacked on jungle monsters.
Not really important considering my last point.
His damage falls off significantly as he's too squishy if he goes full AP.
Hmm, my opponent build a banshee's veil and then full AP, he seemed to do just fine.
He's also immobile and melee...
Mostly, but he does get movement speed from Blood Boil. And being these things doesn't really matter if he makes up for them with sustain and ranged poke spells.
