besides the one in the profile, which requires you to hover over them? Like, maybe some sort of icon in champ select? Because I'm already having trouble remembering the five I have chests on now, I don't know how I'm supposed to remember 20+.

You can go to Profile>Champions>then by mousing over each champ, there is an icon at the bottom right of the popup that tells you whether you have earned the chest or not.
I'd settle for having a filter: Chest Earned, Chest Available, All.
Alternatively, jot it down in a text file which you keep open during champion select. That's what I've done to keep track of my champion pool and skins purchased.
The current way doesn't seem that bad to me, but it would be nice if there were some way to tell during champion select, but it shouldn't be high priority to add that kind of thing when there are much bigger problems like keys not dropping in ARAM or TT.
