Can normals not be so one sided in terms of rank/mmr?

A team of mostly Bronze/Silver should never have to face anyone in Diamond+ without one of their own teammates in Diamond+ yet this is too common of an occurrence. I see team mmr average gaps (according to op.gg) of over 150 points a good amount of the times. Ranked is usually within 30 ish points for reference.

I'd say no. There's restrictions for ranked for that reason. However, normals leave an option for friends to play together, even with high skill discrepancies.

Don't get me wrong. I am all for playing with friends. But when one team is this stacked, its not even worth playing that game sometimes since you just get shit on into a surrender at 20 situation.
