This means, if you have any of these champions on your team...

DON'T SURRENDER
Chances are quite high that these guys will outscale your opponents by leaps and bounds. Even if the enemy is ahead by a fair amount, if you can hold on until about 30 to 40 minutes when these guys start coming online, you'll be able to easily take fights and win.
All right, so I have to correct some misconceptions you have.
are not late game champions. I'm also not sure about Xin Zhao's placement. A note: no ADC really falls off late game, but not all are really late game powerhouses who can thug out late game like Twitch, Vayne, Kog'maw, or Sivir. Oh, and Yi's late game is also not too hot, but he's just not very good right now.
Let me explain why.
Akali: Burst pattern is too slow even if built full damage, and if built full damage is extremely easy to pop. Akali is easily bursted late game in team fights.
Annie: Short ranged, no engage without flash. Burst is good, but often not enough to kill a properly shielded carry late game, especially since QSS counters her fairly hard.
Cho'gath: Damage falls off pretty hard if built tank. If built AP his defense falls off. Abilities are predictable, and he's very slow and easily kited.
Dr. Mundo: Defense falls off a bit late game, and while he can still kill most carries in a 1v1 fairly easily, a properly peeled for carry with lifesteal can DPS and kite the Mundo and kill him before he kills them. He also can't splitpush as well as someone like Tryndamere or Jax, since they dump on him 1v1 late game.
Draven: Despite his extremely high DPS (might actually be the best in his role) and burst, Draven is extremely unsafe in team fights compared to many other carries.
Ezreal: Not really much to say here. He just doesn't have the DPS of nearly any other ADC late game.
Jinx: Doesn't "fall off", but her late game is merely all right for an ADC. Don't believe the meme. She's not a hypercarry.
Katarina: Burst falls off a bit, but more importantly her damage is very easily interrupted in team fights.
Nasus: This is pretty well-known. A stacked Nasus can be a mid game powerhouse before carries get their percent armour pen and big boy AD for crits. Once they do he is prone to being kited and DPS'd. Nasus doesn't have very good team fighting, and he's also one of the less safe splitpushers.
Tryndamere: All right, so here's the thing: Tryndamere's damage is very very good late game. On par with many hypercarries. He is also a great duelist and splitpusher. But late game is decided by team fights. And Tryndamere is a contender for the single worst team fighter in League. The very best he can hope for late game is to soak up CC and damage. So he's like a tank with no utility.
Udyr: Too easy to kite, threat radius is too small, similar problems Tryndamere has. Is possibly an even more obnoxious splitpusher though.
