So, I don't play ADC, so I don't know the nitty gritty of their mechanics. But a couple patches ago I remember Riot saying something about changing Kalista's attack animation so she'd have an effective cap on attack speed since her jumping is tied to her autos, and I got to wondering, do ALL ADCs have a cap on AS? If there is, is there a hard cap on everyone like 40% CDR, or does it vary by champ?

For attack speed, the cap is the same on all champions, and is 2.5 attacks a second.

That said, some champions have soft caps on attack speed. Tristana is a perfect example -- her Rapid Shot loses power if her attack speed goes too high. Since Tristana's attack speed can only ever reach 2.5 APS, if her attack speed gets too close to that, the full effect of Rapid Shot would push her over the 2.5 APS and thus she loses the extra. Fiora suffers this too, as does any champion with a large innate attack speed boost.
