First, acknowledge the fact that your deaths to those champs are your fault and your fault only. One of my biggest pet peeves as someone who's been playing this game for seasons is when Jinx players make a big deal over peel as if she doesn't innately have a slow and snare. As far as peel goes, you can peel yourself to an extent. If you're getting ganked a lot, ward more and hope your lanemate is doing the same. Ward where the enemy commonly comes from. Next, examine the game for what it is. Getting chased down by Zed? Play like it. Getting ran straight at by Yi? Play like it. There are many tools that either of your main champs have to keep you safe. Counter-build. People seem to believe that it should be impossible for you to be one-shot by enemies that aren't carries. That's a hella lie. Most champions can be one-shot by most other champs. It's because they don't counterbuild. Example: a full tank Amumu can one-shot a Nami or Jinx because they're not defensive champions--they're squishies. Non-defensive champions don't have defense. That should be obvious, but it's not. I didn't even realize and accept that fact until late last year. They do not have defense, so you have to build it. If you don't, you deserve to get one-shot, and that's not something worth being tilted over. Again, counter-build. When you learn to do that, you'll realize that most of what happens isn't anything worth being tilted over. Finally, and it's something most people kinda just forget about, understand that you can't escape everything. You can't win every game, despite what people will tell you. Sometimes, your best just isn't good enough. And that's ok. You'll get better. You'll learn to recognize the signs of what to do and what not to do. I'll just tell you this right now: most of the champions you listed aren't actually that big of issues. They're more or less just gatekeepers between casual players and players that actually know what they're doing.
It's easy to get tilted when you get wrecked. It's easier to just get better.
If you are getting chased by Zed or Yi as Jinx and your team doesn't do anything then you can't do anything. Sure you can build
but even if you use that and you are left alone that won't save you.
Sure you can get better every game, even when you play well there is still room to get better.
When you get oneshot and you are in the right position it's tilting, not because of the oneshot itself but because this is a team game and if you get monkeys in your team it tilts you.
You can ward sure, but even if you have wards sometimes you are pushed, so it's not only you warding, you need your midlaner and jungler help too to get vision, so you can see if mid or jungle is coming before. But again if you get monkeys with 10 vision score in a full game that won't make your game easy.
the same way tanks handle their issues with adcs and juggernauts
Cry loudly about the hard counter class and get ignored until your entire class is irrelevant
edit Memes aside
whats your normal FPS and ping? because very few things are actually 100% with proper positioning and knowledge of how a kit works... though it's difficult. I'm not going to give a full on cliche response of 'git gud and don't feed' but there is a nugget in that you can learn the rest of the game's roster and how they work.
i'd suggest aramming for like a month straight, it helps remind you of champ mechanics and what those champs are weak against.
that being said mr bot laner, your team needs you near them :D

i have 144 fps and 37 ping so its not the problem, i also know champions kits and all i played long enough and its not like i always lose to these champions i tend to win a lot but vs these champions my laning phase sucks ball i mean i think i just really dont want to miss a minion and that im too strict on keeping lane in middle cause i suck at farming under tower especially when i have not enough gold for a bf, i also NEED to push when laners are not there until they come back and sometimes it fucks me up so i just get mad as fuck when my playstyle is countered
It sounds like you get ganked a lot. Maybe you should work on preventing ganks. Map awareness, jungler tracking and warding helps out a lot.

well pyke isnt a ganker tho just the most cancer support ever

A Pyke. The champion that was litteraly only made because of all the Whiney ass mid laners who get auto filled because there are 800000000000000000 of them.

can you really blame the guys pyke was made for instead of blaming the original problem or the flawed delivery of a solution?
Tbh i'd have removed the CC on his dash and made his W do something way more interesting and interactive, maybe make his q quickcast have 2 charges and count as an auto reset but like... that'd make him more interactive

All I’d change is removing his grey health. The main weakness to pull champions is that poke shuts them down. But then they decided Pyke should be basically immune to poke for no actual reason.

granted he can't benefit from HP so that would likely completely gut him

Not really. It would force him to play like thresh and blitzcrank, and actually avoid picking fights he can’t win seeing as he’s actually be punishable.
Also he does still benefit from hp. He converts it into ad.
fair enough, though i'd rather a % of his hp gets converted into AD instead of all of it. Like 75% instead of 100% even would be enough to justify gutting the grey health completely (so he'd get 25% of the hp he builds as hp instead of as the converted ad)
As Jinx, you mostly want to throw chompers in such a way that the opponent can't get around them easily, like against a wall, or you wanna throw them on yourself so that when the opponent lands they get chomped. Jinx is an immobile champion and has a tough time vs a lot of these types of champions. Zap usually IMO isn't going to be worth the time unless its really preemptive, simply because of the cast delay.
As Nami, many of these champions can be knocked out of their gap closers by your ult, but aside from that you're going to have to throw your bubbles where the opponent is going to land once they started their dash. It comes down to timing and skill 100% at that point. A lot of the time though, that means just throwing the bubble off-centered on yourself or on an ally, which doubles the use because it also grants a movement speed boost to friendly peeps.
Unfortunately, in some cases even if you time the stun almost perfect, the burst of these champs can be enough to kill you and that's really just how it is. Warding and playing safe is extremely important in not snowballing these kinds of champs, and you need to consciously be aware of whether or not you're over-extending. Knowing when to give up cs to stay safe and playing around your allies does a lot in terms of locking down bursty champs. In the case of like, Hecarim's ult, there really isn't a whole lot you can do and thats where positioning and flash are pretty much your only options. Sucks but such is life.
None of those champions can one shot you, they have to do a full rotation to kill you. Most of them can be escaped if you're savvy and have teammates nearby to help. I also don't understand why you have characters like Amumu and Leona listed alongside assassins and bruisers - their damage by themselves is low, so they're going to take quite a bit of time to kill you.

when they combo with other champs its pretty much a oneshot like leona ult kaisa rape me and i die
Any champion, when working with their allies, can quickly kill you.
