"Tanks" were never an automatic pick, other than support, "tanks" were never popular, it was only two tanks that saw a rise in popularity in soloq which were Sej and Gragas, both of which were nerfed several times and later Cinder itself. Cinder was abused by Bruisers/Fighters more than tanks did. Even during the "tank meta" in our non lcs games Riven was still the most picked top laner, who isn't a tank, the most picked junglers were still Lee and Vi, who also aren't tanks. Even win rate wise, other than Sej and Amu as usual the highest win rate champions were not tanks. You can't claim tanks were automatic picks when AD fighters/bruisers were still being picked much more often than tanks while also winning more often. Also, not all tanks really "scale", contrary to what you think there are some that see their win rate go down as the game progresses. Tanks were also nerfed fairly quickly compared to other champions who have been allowed to dominate several months to an entire year.
I wouldn't completely say that fighters were picked more than tanks. But that was more before Cinderhulk. When Sion and Maokai were the go to top laners. Of coarse when Cinderhulk came into the meta. Top lane no longer had the pressure that they had to be the teams tank. (or the teams engage) (all though I tend to follow the pro scene more than just raw statistics.)
But I don't actually think that would ruin tanks. Even if ADC's are better tank shredders than they were before, they are the only ones who can shred tanks, Mean while, ADC's are still counter by basically everyone else. (you could argue that ADC's will have better ability to counter build against burst or duelists. But they can't do that and build tank shred at the same time.) Rather, the ADC's ability to counter build against more classes, enforces the need for a diverse team comp.
