Kiting like that takes a lot of practice and skill. The only way is to practice;
right click = you move, a+ right click = you attack
You have to time this very well in order to kite.
There is also the possibility of clicking in a direction you want to go and also clicking on the enemy champion you want to attack just in case there are more targets around you and not just 1. However, it might be better to attack what is more available anyway.
If you understand all of this and know how to do it there is a possibility that one more thing might be holding you back: stutter stepping.
When you rotate from move to attack move TOO FAST instead of actually kiting you are making your champion stutter and in a lot of cases you are actually canceling attacks too early which pretty much makes you do LESS damage.
Create distance, attack, distance, attack, but keep in mind that you have to do it fast. Just find some balance that suits you well.
BTW unless you are playing in high diamond + I don't think you NEED to kite like that most of the time you can just position yourself well. It can be very helpful to play champions like jinx where you have more room to learn kiting.
One last tip I can give you about kiting is to forget attack move completely, play ezreal and instead of auto attacking just q them and run and you will see the difference between kiting and stutter stepping and eventually you will learn how to do it with AA.
It's hard but not THAT hard just practice and know what you're looking for. In case this advice here is outdated or I might not have good info double check with high elo players that can help you with this. It's a beautiful skill to develop in this game IMO>
