Which champs do I use to defeat Graves and Quinn top?

I'm talking about in the ranked environment.

I've heard malph is supposed to be pretty solid but seeing as he's permanently banned in my elo (mid gold) I can't have him as a go to.

Honestly, though I don't consider myself great at malph but he's hardly challenging to play. Despite this I feel at a disadvantage when going against either of these two in lane with him, trades are really hard if quinn vaults and passive strikes you, it chuns so hard and Graves just tanks so guud, can't seem to win the trades even if I dodge his Q as his autos hits like nukes when at melee range.

And as earlier stated, Malph more or less permabanned.

I like playing tanky toplaners, but feels like they're cannon fodder for either of these two. Any suggestions?

Edit: Don't think I'll be climbing out of gold until I learn to best these two in lane, any suggestions would be really helpful.

If you can't use Malphite, you could try Rammus. He scales well with Armor.

Tahm Kench, if he's not banned, may have the safety and tankiness you need to farm.

Idk why, but I've had success as Sion VS Quinn. Maybe it's the Frozen Heart+Iceborn Gauntlet rush and I set up ganks really well.

Nautilus may be worth a try.

I did pretty well against Graves as Teemo. Starting buy dorans ring & 2 pots. Second buy, corrupting potion and catalyst

Irelia and Renekton are probably who I would recommend the most. They are versatile picks who can handle ranged top laners far better than most.

Pantheon is an absolutely brutal match-up. If he gets even the slightest lead, he will pretty much murder them whenever they walk into stun range.

Fizz can work well. While farming early can be difficult, you shouldn't have any issues after your first back and a few levels (since you will be a Fizz with Sheen against a squishy target).

Cho'gath could work due to his sustain and high base damages (W is generally reliable for waveclear and poke).

Trundle may not be a bad option. While he probably won't be getting kills on them in lane, his E is fantastic for setting up ganks and the combination of his durability and innate sustain can make him difficult to shove out of lane. Generally, you would want to rush something like Frozen Heart, Iceborn Gauntlet or Thornmail in this match-up along with some health.

Singed CAN work if you know how to play him well since he can kinda bypass a conventional laning phase and his Fling can grab Quinn and flip her when she Vaults to you. This is definitely only something to do if you are actually experienced with him though.

Lulu has enough waveclear, poke and range that she may be able to handle them (but I don't play her enough to say for certain).

Health Regen Quints and Doran's Shield are quite useful for champions like Irelia and Trundle against ranged top laners. They provide a massive amount of passive sustain which can let you stay in lane for signficiantly longer than normal.

Anyone that has a reliable engage and stickiness is great vs ranged tops. Nautilus is a nightmare for quinn, Malphite (like you said), just in general tanky champs that can for the most part ignore the poke and engage on them.

Back in the day Irelia was considered the counter to ranged tops for the same reason. She has regen built in, and she has gapclosers (Q to a minion near enemy, they have to use dash/disengage to get away, then you Q onto them and proceed to collect 300g).

If Maokai was in a bit better place he also does well vs ranged tops.

Pretty sure Rammus does well against both. If Rammus taunt works anything like Singed flip, you can catch Quinn as she vaults. No punishment (and you actually have incentive) for stacking armor.
