How do you do the auto-attack animation cancelling as an ADC?

Well I watch Piglet streams and when he's CS-ing his champion's auto animation is so short, I guess it's some ADC mechanics that resets your auto cooldown? I saw him click a creep and then immediately click on the floor, something like that.

Auto-attacking or stutter stepping is an essential part of a good marksman's skillset. It allows you to get attacks off faster as well as move your character to re-position in fights. Going through the motions by typing is pretty tricky to follow so I'd suggest you watch this monotone Ciderhelm tutorial that is packed with some useful information.

A little history lesson: one of the most prominent pro players that utilized this sort of mechanic back in the day is CLG Doublelift (A little compilation of his best moments make sure you keep an eye on his movements in these videos)

Feel free to add me if you want to practice this mechanic in a private or normal game with me, I'm more than happy to help.

Best of luck on the Rift, Afro

When your auto attack is in the air you can cancel the rest of the animation with a move command. Timing is different on most champions in my experience

It doesn't reset auto cooldown, it is strictly resetting your animation. It's just getting rid of the follow-through after an action. It can be done with specific timing that you have to get used to yourself.

after the auto attack leaves your champion you can move canceling the animation before it ends.
