Can we still play older versions of champions?

I just had this idea(or it may have been said before), that in custom games or something, we can play the old versions of reworks champions. I know it could probably be outdated with interactions or something, or maybe you deleted the old version? what are some thoughts?

They said that they are ready to do a revert on any rework if needed be. So they do have the old champion versions.
