I think that Scorbunny being Fire/Fighting is a pretty safe assumption, but in my opinion based on it's design, description and Japanese name--which usually ends up being the determining factor--it'll be Fire/Electric. There's a logical chance for Grookey to be Grass/Rock, but again considering the description there's a chance that it'll be Grass/Psychic or Grass/Fairy; BUT, based on it's Japanese name, as well as it's possible design-basis, it may end up becoming Grass/Fighting. Finally, with Sobble, it may remain Water but my assumption is that it'll become Water/Ghost.
If people haven't discovered it yet, the region is hella European (for lack of better terms due to American ignorance >_>;) as well as sports-themed. There's:
- The focus of the region on industrial progress
- Building designs
- What appears to be Big Ben
- The fact that the Galar region shape is at least based upon if not matching the UK
- Pokedex Girl's hat
- Pokedex Boy's jersey as he enters a stadium
- Most assume that Scorbunny's bandages are because of "fighting", but considering it's design and description (as well as the fact that it's name might not be "scorch bunny" but instead "score bunny") it might be sports-based, such as Soccer.
Now, specifics about why I think the Starters are the types I say:
Scorbunny is described as energetic. It's also shown to be runnnig and creating sparks. When it comes to pokemon being energetic that usually ties to an electric typing. Fighting is highly possible, though.
Grookey is seen hitting a rock, but tbh that's less a matter of it's typing and moreso of it's choice of activity. As it's Japanese name implies, it creates rhythms using the stick used to tie it's "hair" and drumming on rocks. It's described as highly curious which ties into why I say "Psychic" but it causes grass to grow so that could be Fairy. Considering it's ties to rhythm though, and the fact that it carries a stick used to hit stuff, I figured it could become Fighting. Fighting or Psychic work, because it could either become a staff fighter or a staff witch doctor. If it's the latter, I can assure you that there'll end up being fanart of it lifting Litten.

Finally, there's Sobble. It's meek, and tends to hide. It can turn invisible, too. That's pretty much the ingredients of a Ghost-typing. Still, it could end up as something completely different. We'll see. I'm sure that they'll reveal more at the next event.
