Good idea, I am going to do the same although I shouldn't have bought Alistar just recently, he's weak :/

Build him full AP (RoA build) and watch the enemy cry about how much damage he does while being extremely hard to kill.

There are no squishies left without a fuck ton of cc or burst. Except ADC's, but you should have a support beside you. And come late game, even an ADC will have burst.
