"Destroy 7 inhibitors" mission -- impossible?

Just saw one of the missions is to destroy 7 enemy inhibitors over the course of several games. It just feels like an impossible task when teams either surrender before any inhibitors get destroyed, or steamroll and obliterate all of our structures while retaining all but one of theirs, usually only missing the tier 1 tower top.

Any tips for this mission in particular?

My last three games the opposing team all surrendered before we got even 1 inhibitor.

Uh...grab a Herald to try and steam roll a lane to reach the inhib faster before the enemy team surrenders?

ARAM works too, but you have to play about 7 games though.
