People have missed the point of the assassin update.

The whole point of the update was to diversify the menace of assassins and slow them down a bit so they couldn't one hit kill someone in a crowd without consequence. The fact that this flew over so many people's heads, people who will do nothing but assassin main until they become a withered husk and the stars grow cold and distant, that trying to comprehend this just hurts my fucking head.

You can't bullrush into fights anymore as an assassin, kill your mark and expect to live. You have to be more opportunistic and actually fucking cooperate with whatever tattered shreds of a team you have.

My problem isn't assassin damage and burst Windows. It's that mages do the same damage, typically in more of an aoe fashion, from safe range. But, that's being addressed with all across the board AP nerfs by cutting total AP and adding more CDR. Hopefully this will keep assassin damage absolutely higher in almost all cases and give you a reason to pick them over mid lane Mage powerhouses.

Rengar Khazix can still do that just fine

a good Talon Katarina can do just that as well.

Every single other assassin is just terrible and are unable to assassinate anything unless they somehow manage to get stupidly fed

People have also missed the point that slowing down their damage output doesn't mean weakening them. It just means they have to be smarter about when and where they make their move.
