Getting rid of bans would arguably be healthier for game balance

Aside from people screaming at you regardless of who you ban, getting rid of bans will only further highlight the problem that the most frequent champions banned have. That will give us a better estimate of what their problems are and what should be done to fix them. I think Riot even pointed this out a year or two ago; it's harder to fix champions that get frequently banned because you're not working off of complete enough evidence.

Do you think banning champion bans would be a good thing?

No because there is no strategy then, you will just get counter picked every game, and you can't ban the strong picks (there will always be strong picks). You really don't need better estimates as to what the problem is because if a champion is being perma banned then the problem has already been so broadly broadcast that it should be apparent as to what the problem is.

Except there isn't a strategy now. no one actually bans counter picks. They always just ban whoever is believed to be the strongest picks ATM whether they are or not.

Everyone has a weakness, and there is always a strategy for taking down champions. People just need to be more aware of them and actually exploit them. People claim Udyr is overpowered right now (and he is), but he still has giant glaring weaknesses that nobody takes advantage of. Same with Master Yi. Most of the problems I see stem from people picking their favorite champion and expecting them to fit ideally in any and all situations, and when they don't, whatever champion demolished them is overpowered and needs to be nerfed.

Bans are a strategic part of champ select and getting rid of them is a really really bad idea

Riot thinks a high win rate is indicative of a champion needing to be nerfed. They have no reason to not assume that for ban rates, too.
