I'm honestly not happy with the elixir changes this season. There are many champions who need both AD and AP (Ezreal, Poppy, etc), so there isn't really a "best choice" elixir. And in previous seasons, you were able to get all of them anyways, so why shouldn't we be able to do this now? Late game we have all this extra gold and we can't spend it on anything. Kinda stupid.

Having gold and not being able to spend it on anything is stupid. And you've always been able to buy multipe elixirs. Why change it now?

Because the new Elixirs are extremely strong? One of them gives you Tenacity + Slow Resistance and a ms path, one gives you AD and makes any physical damage you do heal you, one gives AP and gives you true damage on towers AND champions, and the other gives you health, damage to towers, and increases minion ms and damage to towers.
Old elixirs were flat hp + AD or AP + cdr. They weren't really strong, just flat stat boosts you bought constantly if you were full build. Since the new Elixirs are much stronger you are restricted to just one at a time.

Everyone would be allowed to buy them (ALL of them), so it's completely fair for everyone.

No, it's not. "Oh look, one team has a 2k gold advantage but everyone is full build. Oh look, one team now basically has an upgraded baron buff for themselves without killing baron"
