How to Stop a Vi?

How are you supposed to defeat Vi these days?

Her passive + CotC gives her ridiculous shield potential, she builds tank (excuse me, "bruiser") yet does massive damage in one burst, she has incredible mobility, has loads of CC, has an AOE ability, and has an ult that seems like it's always up and is CC-immune. She is owning the jungle with Lee Sin and quite literally cannot be stopped. Every game with a Vi feels like she's in every lane at once, and the match ends up being more about surviving Vi's eternal lane pressure than about getting the nexus. It's a good day if Vi doesn't get 17 kills.

With the jungle meta in effect now, and CotC giving her even more protection, how are you supposed to counter her? No amount of CC can stop her from charging into the backline and taking out your ADC (the player who is actually supposed to kill heavier champs like Vi) or mage in one go. By the time she's done pummeling your squishies, the rest of her team has collapsed upon you and your teamfight has gone south real fast.
