At this point I'm not sure what to even pick in Mid Lane

Pick a mage and your team magically always manages to misplay the utility you provide to them, then the fight is slowly lost between your cooldowns where you can't contribute any more damage.

Pick an assassin/scaling AD and there is noone to provide the utility that you would have provided, so you end up getting picked off, lack clear and have your lane steamrolled with a rotation, etc.

Damned if you do, damned if you don't.

Might as well start playing ADC at this point, then it's everyone else's problem to fill the shortcomings of the team.

I feel like the fact that mid has the biggest champion diversity in the game's current meta makes this opinion a tad unfair, and actually too vague to offer a proper response, if you were expecting reasonable posts. Can you at least give a singular example?

I should also mention that the very benefit of how diverse mid can be is, you can actually play to the strengths of your team. If you don't, then yeah, you'd probably struggle at least somewhat.

This feels more like a complaint with the high amount of emphasis the game puts on team play than anything. Mid lane is incredibly diverse, you just get matched with shitty dude.
