We need to stop with this mindset. Most of the time champion winrates stay the same throughout all elos. You can say "if you play well it doesn't matter" If the enemy team stacks high winrate champions (53+) and yours don't and sometimes picks low winrate champs, your win chance can get below 30%. This does not take into account champion matchups, and in some cases, it can get as low as 20% before the game even starts.

you need to realize that youre not good at playing against these champions, and that in order to win more, you need to improve your own play. if a champion isnt a problem at high mmr, then people obviously figured out a way to deal with him that you havent realized yet. so the problem isnt the champion, but with you.
quit being lazy, and expecting riot to change the game around your incompetence.

If these champions also have a high winrate in high mmr, than either the players don't know how to play against, or the champion needs changes. Also, even if I know how to play against a champion, I can't expect my team to know how.
