Missed opportunity. Instead, the Grand Duelist attacks your vitals to... heal herself? From losing a duel?
Edit: I'm not saying leave her kit the same and give her bleed damage. I'm saying the idea of vitals being used for bleed damage sounds way better thematically than how it works on Fiora.

Exactly. Why does she need it to heal herself? Sustain exists in the game in order to recover from being dealt more damage than you deal. It just seems off thematically.
