If you pick a champion you are not familiar with, and your opponent picks one he has 200 games with, then you will likely lose the lane. No matter how broken op you think your pick is.

+ That other guy probably knows his champ in-and-out - You probably can't even tell what your Ws passive does without looking it up

+ The other guy knows at least 3 build paths and variations for each of them by heart - You know one build path, maybe.

+ The other guy knows exactly how to play his champ from behind - You don't. Because the YT "guide" you just watched only presented win after win

+ The other guy has likely played this matchup before. Probably dozens of times. - You have not.

Sun Tzu writes in "The Art of War":

If you don't know yourself, or the enemy, you will never win. If you know yourself, but not the enemy, you will lose for every time you win. But If you know yourself, and the enemy, you won't fear the outcome of a thousand battles.
