2 reasons:

do you really want to accidently bounce all the way out of position
it would be a really broken escape mechanic

As to teemo shrooms that would be an extremely random interaction.

That's not how this works. The game has to be balanced. Random interactions should have no effect on gameplay and Yasuo can only E through a teemo shroom because it is treated like a minion and not a ward (which it really should be). Also allowing people to bounce off multiple things sounds like a good thing in theory until you try and ult people in a teamfight or even people troll you by leaving an invisible teemo in your lane so you hop to kill them and bounce of teemo and the laner under tower.

I don't even know why gnar would specifically have an interaction with teemo because they have 0 relation to each other other than they are both yordles.
