Should I play Ekko or Talon?

Ekko is a bit better because he is easier. Easier in a sense he has mage pattern in teamfights so you can stay in mid with rest of the team and help clearing minions. He is also not having the assassins' issues in lategame.

Talon is stronger earlier and is currently quite busted due to lethality and ignite buffs - I play him myself now on smurf acc and I climb easily. However you don't want to play him like a mage, you need to be constantly looking for picks or flanks. Also, if you fail and enemy duo bot is not complete garbage if that game gets to 30+ you will have hard time winning it.

You will also want to play Ekko if both jungle and top will be AD so your team has AP source.

They're both pretty decent, but I prefer EKko. He has a reasonably high skill floor, but his skill ceiling is fucking infinite. There is seriously no limit to the cheeky shit you can pull on Ekko. The best part? It feels good, it feels like an outplay. He's one of the few champions in the game who can legitimately 1v5 if you're skilled enough.

I HIGHLY recommend you pick up Ekko.
