Can someone name me every champion considered a burst mage?
I can't tell the difference between burst mages vs sustained mages. Ryze, for example, could be considered both.

Almost every mage has good burst
Veigar, Kassadin, Ahri, Syndra, Cassiopeia, Heimer, Annie, Lux, Ori, Ryze and Vel'Koz are burst.
Gragas, Cho, Malz, Karma, Vladimir, are the sustain I can think off the top of my head
Orianna not in the burst mage list, but Twisted Fate and Lissandra are.

Then explain how she bursts. Literally the ball doing that kinda pulse thing deals quite a bit

I can't understand whether you agree that she has burst or disagree...

I'm saying the guy claims Ori's NOT burst, yet I've been burst down by her MANY times

Of course she does.
She even has around the same AP ratios and base damages as Lissandra. From a much safer range no less.
By sustained mages do u mean consistent damage mages (i.e battlemage) or sustain mages like Vlad or swain?

Also, I would like to point out that nearly every mage in the game has a combo that deals lots of damage (i.e
WEQ) but that doesn't really make them a burst mage.

Anivia is more zone mage and not really a burst mage. Yes her E is pretty strong but I wouldn't consider her a burst mage for that alone, hell even
has more burst than Anivia while keeping a decent amount of zone.
To OP: You could use this thread that Riot created about it. Though not sure how much different it is since it's about a year old now. https://boards.na.leagueoflegends.com/en/c/developer-corner/3A5uuBw7-champion-subclass-list
Only the super dps oriented mages have bad burst.
