The Cho'Gath Fantasy

But I feel like he's missing something. He has his niche, but I feel like there's a missed opportunity somewhere in his identity: the giant animal.

Look here at Grimlock from Transformers: Fall of Cybertron. http://youtu.be/wMIPm-xfTyk?t=4m35s When he goes into T-Rex mode, he transforms into a lumbering engine of destruction. He lunges and bites, stomps and sends out shockwaves, breathes fire, sweeps aside enemies with his tail (for the record, I think Cho'Gath's tail looks a bit like a mace), and executes enemies with a snap of his jaws, restoring his health. Cho'Gath does many of these same things, but Grimlock does these with greater fluidity; he chains these attacks together and gives off a primal sense of animal savagery. Rek'Sai does many of these same things, I might add, in case you wanted to argue "It's just not possible." Rek'Sai bites and claws and swipes; she uses all of her body as a weapon. I wish Cho'Gath did many of those same things.

Now here is the Deviljho of Monster Hunter. https://www.youtube.com/watch?v=lhh7x6lqinU A monster after Cho'Gath's own heart. It's big, it's bad, it's a ravenous monster with an all-consuming need to eat literally everything, it breathes black and red lightning (okay, the last part isn't part of Cho'Gath's portfolio). The point is: this thing uses its mass too. It stomps, swipes and bites, eats and devours. And it's unrelenting.

Granted all of that, I like Cho'Gath's kit (though I question why you would ever want to turn off his Vorpal Spikes, which would only matter when last hitting which itself is only important early game in lane and practically useless in the jungle). He's a tanky disruptor with a side dish of mage; he's filled that role for quite a while. But I feels he could use something.

What is your Cho'Gath Power Fantasy? Stay with the tanky disruptor, or put further emphasis on the snarling, massive beast?

There is a reason to why these games are in different genres.

The Transformer games are in the 3rd person shooter/ 3rd person spectacle fighter game with some driving elements mixed in. Same with Monster Hunter, being a 3rd person action game.

LoL is viewed from top down, hence details during actions aren't really needed as you don't always see (pay attention to) your toon 24/7 like in the Transformer and Monster Hunter games mentioned above.
