The true reason that CertainlyT champions are unfun to play against.

People always say they are "overloaded", but that isn't exactly it, there are and have been plenty of arguably overloaded champions over the years not designed by him that don't get nearly as much hate. I think one word perfectly describes a strength almost all of his champions have:

Pressure

Every last one of his champions are designed in a way that they constantly demand your focus, particularly in lane. They are perpetually ready to tear you a massive new hole the moment you let your guard down for even a moment. They are designed to not give their opponent any breathing room.

Imagine shooting a 3 pointer alone on an empty basketball court. Now imagine that you have to do it in front of a crowd of thousands, you haven't eaten anything or slept all day, and there are armed soldiers on standby ready to slaughter a bunch of orphans holding puppies if you miss the shot. The latter is what it's like to play against a Zoe, pre-rework Darius, Yasuo, or new Graves.

High pressure champions are inherently stressful to play against, but CertainlyT champions essentially take it to a negative extreme for a lot of players.

CT champs have kits that minimize their weaknesses and optimize their strengths.

As an example, if you have an unfavorable matchup against a champion, but you're simply a better or more experienced player than your enemy, you have a chance to outplay them, yes? It's gonna be hard, but if you know what to do you stand at least a reasonable chance of handling the situation, maybe even coming out on top.

This is not the case with CT's champs. If you're in an unfavorable matchup against Darius, there's no amount of outplay that's going to let you take care of him, because he's going to outstat you, and he's going to eventually catch you and murder you, or render you completely obsolete because you have no farm. You need a champion with the correct tools to play against him. It's not enough to simply be good enough to outplay him, you need a button that answers his play pattern. The only other answer is having your jungler take care of business for you.

And because of that design, they're not fun to play against. Even if I beat them solidly in lane because they're absolute garbage, I don't have fun. I feel some satisfaction and amusement, sure, but it was never fun.
