You can be (and I've done it multiple times now) a FULL TANK FULL BUILD Mundo and get one shot by a not fed half build Rengar. I'm literally tankier now in Call of Duty than I am in League of Legends.

building full tank veigar doesn't make you a tank building full tank mundo doesn't make you a tank
he's a juggernaut you can be a tanky-juggernaut but not an actual tank coz it's not his class speciality
tanks provide utility and front-line for your team so yea, i'd rather have a tank support than an assassin support so there's one scenario where tanks are a better pick than assassins
tanks also usually have defensive capabilities
