That's the long winded and in-depth version. Here's the short verion:
How to beat poke: Either sustain through their damage (finesse) or outright kill them with gap closers. Poke champs typically have long range abilities but lack either mobility or crowd control. Exploit whatever they are lacking.

How to beat sustain: Ignite and burst them down. Weak to High DPS. Harass with auto attacks, bait out heals, engage only when enemy is unable to heal/shield due to cooldown windows or depleted resources.
Example:
Nobody is hurt more by ignite than Soraka.
Engage Alistar once his headbutt is on cooldown and kite him so he cannot knock you up.
How to beat kill: Poke them down so that they lack the health to engage you. Make use of peel abilities and exhaust. Force them to play defensively.
Example:
Harass Leona heavily prior to level 2 power spike. She will not be able to all in you when her health is super low limiting her effectiveness.
Damage output is severely hampered when exhausted.
