Is there any benefit to this?
for ADC I run flat AD quints and grab a dorans blade.
Is there any benefit to Lifesteal Quints, Longsword, and extra potions?

Depends on if you're building that longsword into anything, and how core that item is. If it's an item that you believe outweighs the disadvantage you get from starting longsword over doran's, then sure. For instance, my friend starts long sword on Wu Kong rather than flask or doran's blade as brutalizer is so strong on him.
Flat AD is fine, I personally use 3 attack speed quints. Life steal quints can be good too but pots are so cheap it's easy to get all the sustain you need in lane just from pots.
as for dorans blade vs longsword + 3 pots; the benefit of dorans blade is the extra HP and lifesteal helps a lot in lane.
