That depends. I know from Rioter comments that they do bring back old VAs for a rework along with multiply new VAs. If the old VA fits & does a good job, then they'll likely bring her back. But if the VA doesn't fit the new character of Eve or one of the new actresses does a better job or the old VA choose not to return, they'll go with someone new.
There's a chance her voice actress will return since Syndra was also apparently voiced by the same person as well.
While it's not guaranteed, at least Eve's voice actress appears to have voiced more recent characters compared to the likes of some of the other original champions.

It just depends really. They usually hold auditions when they update the champions, like they said Ryze's previous voice almost got the part again with his update but they chose someone else in the end... so same thing could happen for her.
