Because her parents decided to just call her that because they liked the name?
I mean Miss Fortune's not a princess despite the meaning of the name Sarah. Katarina tends to be associated with pure but Kat's anything but that. We're not beholden on to the meaning of ours names as the crux of our entire existence, or else I'd probably be religious. People just have names that are nice.
If you want her to be a redhead? She has two skins that makes her have red hair, Blacksmith for dark orange-red hair and Ragdoll for crimson-red hair, and a new chroma coming soon that gives her pink hair because Poppies can be pink.
Note: Poppies aren't only just red, yellow is one it's colors out many others, so Poppy having blonde hair is still accurate to her name.
