I'll start:

Fiddlesticks, Maokai, Anivia, Mordekaiser, Kat, Gragas, Irelia, Janna, Yi, Sona, Veigar, Annie, Lux, and pretty much any champion that refers to the player at any time since you're playing as those champions now, not as a summoner controlling those champions.

If you think about it, with the removal of the summoners, champions shouldn't have quotes at all unless they're delusional and like to talk to themselves while they kill people. Since there are no longer summoners, who else would they be talking to? Taunts would still make sense, as they could be taunting the enemy, but what about when they just say something as you're walking down the lane?
If you think about it, anyone who talks to themselves while they kill people would be considered psychotic.
Nocturne & Maokai.
Urf's entire existence and death.
Brand not incinerating entire country sides at a time.
The band of Pentakill.
The friendship between Lulu and Veigar.
Entire countries of less than properly educated hyper fanatical people not completely destroying their world via another Rune-war.

League of Legends was the name that the summoners/institute of war (can't remember) gave it.

Seriously, how are these soldiers even relevant? The whole battlefield could be wiped from existance at any moment, because the IoW was the only thing that ended the runewars. Without it being created, there would not be an end to the mass extinction spells being thrown around.
The worst part of it all is that the extinction of Summoners would have solved the biggest balance problem Riot has. Lee Sin should have been erased from the game.
