Is olaf literally unkillable?
If the prophecy is true, then why doesnt he just march over into the shadow isles themselves and kill everything?

He cant just march over into the shadow isles because he cant walk in water.
us viking descendants have always been hard to kill.
Because you can't kill them...
THEY'RE ALREADY DEEEEEEEEEEEEEEEEEAAAAAAAAAAAAAAADDDDDDDDDDDDDD!
The whole reason Olaf seeks out things that can kill him is because of honor. He wants a good death, so that he can rest in peace.
The Shadow Isles are the exact opposite of having a good, restful death.
Olaf isn't unkillable. He's just too good as a warrior. And also, the prophecy foretells him passing peacefully in his sleep of old age. He wants an honorable death and there's nothing honorable in having his soul ripped from his body to be tortured by Thresh
He wants songs named after him, tales that honour him. going into a island filled with creeps with nobody to witness his valour is not his idea of heroics.
