Riot is in the process of drafting a radically different kit for Yorick, meaning that the identity of the skin may end up changing as well. Rest assured, whenever Yorick is at a good point (Probably post-relaunch), he will start to get more skins.
Yorick isn't played very much, thats why he hasn't gotten a new skin. They make skins for more played champs. Did you notice how Ashe just got her 7th skin? She's played a lot, as where Yorick isn't.
Wait until he gets his relaunch. I'm sure he'll get a new skin then.

Riot's mentioned they don't really want to release new skins for a champion they badly want to rework.
Which makes a certain degree of sense - concepting a new look, moddeling it, texturing it, and creating new splash-art you're going to replace a few months down the line (hopefull) is kind of a waste of effort. Especially if you could save that awesome skin idea for re-launch hype.
There badly needs to be a PKMN Trainer Yorick skin though, where he sends colorful elmental-themed dinosaurs at his enemies.
