Is it seen as fair play to give out discord links in chat and "become" a 5 man team?

As far as I know, Riot has never said that you cannot do something like that.

That dates back to the curse days; I have never actually done it, but I think it's a neat idea.

I've never seen it not be! Only issue is actually getting everyone to join the discord, but that's an entirely different problem.
