Why is everyone bent out of shape about how long it takes to earn IP

I have as many champions as I really want and I have a large amount of runes, the grind isnt really that bad in my opinion :/

Because self entitled people have never played a Korean MMO, THEN they will know about grinding.

"As many champions as you want" can change hourly for some people, likewise "large amount" of runes is relative. The general consensus is that taking 2 years of heavy play to unlock everything (and that's not including what is released during that time) is too grindy.

The grind isn't that bad if you have all the time in world to do so. Most people are just casual players who play 1-2 games a day because they have jobs/school and other responsibilities. Imagine trying to grind for a few rune pages and some champions if you can only play that much.
