So, I've been spamming Mundo just recently....
and I'm really curious why I have only seen one other Mundo in the past year+...
I've never played another champion that can consistently 1v2 1v3 1v4 like this. Why don't people play him?

Because being tanky as hell is literally his only merit.
And he would actually die when he is ignited during his encounters, or facing off against people running Morello's. Sadly AD toons can't do much against him, besides a few that is.
cause he literaly offers nothing to a teamfight, except tankyness he has no cc no peel. In todsays teamfight cc lockdown meta he has no place. Dont get me wrong i love Mundo he is fun to play but he cant truely tank anything all u do is ignore him and kill everyone else then finish him off.
I think a lot of people underestimate how aggressive you need to be with him in the early game, and therefore don't care for him.
