and I'm really curious why I have only seen one other Mundo in the past year+...

I've never played another champion that can consistently 1v2 1v3 1v4 like this. Why don't people play him?

Because being tanky as hell is literally his only merit.

And he would actually die when he is ignited during his encounters, or facing off against people running Morello's. Sadly AD toons can't do much against him, besides a few that is.

That's really not all he has. I often finish games with top damage that's the whole reason I can 1v2 1v3 1v4.... If I didn't have that damage they would just get away every time.

Top damage in total or on enemy champions?

Top total damage isn't surprising considering he has an AoE and most Mundo builds Sunfire to abuse that his HP and AoE advantage.

If it's top damage on enemy champs then man, sleeper OP right there, or maybe it's just because your elo bracket is filled with people who have no idea how to deal with tankers who knows.

cause he literaly offers nothing to a teamfight, except tankyness he has no cc no peel. In todsays teamfight cc lockdown meta he has no place. Dont get me wrong i love Mundo he is fun to play but he cant truely tank anything all u do is ignore him and kill everyone else then finish him off.

I find it funny when people ignore me as Mundo, that's when I b line the carries and take out the mid and ADC.

My average KDA out of ten games is 8/5/12. You can't get that without damage or it would be more like 2/5/17

Mundo offers a scary threat in teamfights. If you get targeted in a fight, you've really already won the fight. If you don't, you're liable to kill somebody.

I think a lot of people underestimate how aggressive you need to be with him in the early game, and therefore don't care for him.

That's really up to the matchup. You normally need a tier 2 item at least before you think about going aggro.

If it's against a riven or something, I definitely agree. But against, say, a Vladimir, I think it's worthwhile to go in level two, as his E provides a kind of crazy power spike at that low of a level. Trades are won against anybody not specifically designed to win trades like that, like Pantheon.
