I looked up Gank in the Dictionary and it means: Verb to steal

gank2 verb to show disrespect for; to hurt another's feelings

gank3 noun fake crack cocaine

so by looking at this I came to wonder how a slang word for fake cocaine came to be a word that meant leaving your lane/jungle to ambush enemy players.... can someone help me?

Because the other two meanings include theft and disrespect.

I'm not sure myself, but maybe it's from the words "gang" and "flank" put together.

This makes sense. But why didn't they just use the word "flank" instead? It's actually exactly what a gank is. Although you can also just lane gank, most ganks are flanks. While gang means you have to be with multiple persons, you can't really flank on your own. Unless you use your own turret as another person, perhaps. Still, they could've just changed the definition of flanking a bit instead of making a new word.

But yeah, up till now I also had no clue where gank came from and have been using the term ever since I play league...

Gank was first used in DOTA for anyone who can remember that far back. The original game......too bad blizzard never could get that going properly. That was a game.
