Jax can hold his own with the dodge, and you might be interested in the new Shen coming out tomorrow, who also has a dodge mechanic. Malphite also does very well because of how badly he cripples attack speed (Though malph needs to be careful for the early game; before hes gotten a chance to get a bunch of armor).
Tryndamere's don't tend to build a lot of health/resistances and instead rely on their incredibly high damage output for sustain. So, champions like Riven, Fio, and Irelia eventually lose out to him because of his ability to survive any burst and provide very consistent dps. If you are playing someone like this, outplay is required; burst him to force ultimate, and kite out the ulti and reengage.
You might not be able to kill him very often; a seasoned tryndamere will realize they can't win and disengage during their ultimates duration; its up to you to know if you can pursue and get the kill or if its better to be happy with the cs advantage.

I just returned to the game recently ( I played before the Rift artwork changed/new jungle monsters ) and have recently picked up Tryndamere as a jungler. I can indeed tell you he has weakness. Things to exploit are his melee range, weak pre-six and his weakness to crowd control. You can do this by overcoming the weakness most of the players who consistently lose to Tyndamere have: fear of his ultimate. If you can kite him or CC him until his ult is down you can easily kill him; especially if somebody on your team has DoT you can stack on top of it. If you can keep him behind you pre-six you can also make him a bit less of a threat later on as Tryndamere is very item dependent like many traditional ADC are.
