Since his AS converts to AD, he gets even MORE AD from building crit items.

Isn't DFT only apply with spell damage? his AA shouldn't apply DFT at all, only his abilities, which only his E and ult apply full DFT effect.
I think you might be a little confused about how Deathfire Touch works. My guess would be that you're interpreting the figure shown when you hover over the mastery as DPS when it's actually the total damage dealt over a four second period (at least in the case of single-target abilities).
To put out 201 DPS through Deathfire Touch alone Jhin would need to have 1,340 AD.
