To current date Shyvana is the only one, but since she's a half dragon I'm not sure she counts. Ao Shen is the dragon champion that Riot announced, but they since shelved him as they were having a ton of difficulties making him.

I thought his name was Ao Shin? He's been confirmed to get cancelled, but they're making a dragon called Aurelion Sol instead.
