How do you exactly play against ryze?

Try not to put yourself in minion waves and fight him when he has no stacks of his passive.

Don't engage on him (or let him engage on you) when he is near max-stacks on his passive.

Kill him early before he has items or levels.

Call your jungler to gank the immobile and initially squishy champion.

Pick someone very strong early, or hope that the other guy isn't good at spamming his abilities.
