Mobility creep is fine.

If we have a ton of champs with mobility it makes this game fun. I'd rather 10 more kalista's then 10 more viegars.

Full on mobility creep would be fine if there were no champions who are purposely limited in their mobility. Mobility used to be like mana gating when it comes to keeping certain champions balanced, however those mobility gated champions are still around while more and more mobility is being added. Perhaps it's time to change mobility gated champions, but until that happens mobility creep is at least a small problem.

While I agree mobility makes things fun, I don't think it's the only way to make things more fun (I don't think that's Riot's opinion either), and I think overusing it can create more problems than enjoyment. Mobility is being handled a lot better now than it used to be, and outliers like Kalista and Kassadin are mostly related to issues not directly related to their own mobility (Kalista hard-counters melee champions who already react extremely poorly to kiting, and Kassadin just doesn't have the right strengths and drawbacks in his kit yet), but immobile champions can be just as fun, including champions like Veigar: his recent changes were mostly quick adjustments to make him more counterable, but the idea of blowing people up at the press of a button could be made genuinely cool for everyone involved, including the target, provided there's enough gameplay to those mechanics. That's also a fantasy that doesn't really require mobility to achieve, and I think a lot of currently not-too-viable immobile champions also have the potential to be strong and fun in all the right ways.
