What exactly do people mean Ahri's too tough to beat?
I've literally seen countless gold and beyond streamers pulverize her even without their jg camping, how exactly is she "too tough" in lane?

If someone says that she is too tough to beat in lane, they should probably be discredited. She's not too tough to beat, she's just a dominant laner that needs nerfs.

"needs nerfs"? So shouldn't Kassadin also get nerfed since his teleports are THE BEST escape in the game while he also bursts?

It practically the fact that she has too much mobility compared to other mid champions, Kassadin may be one, but out of 30+ mid lane champs it is a fairly large and noticeable difference.
Katarina? Leblanc? Yasuo? Insert other assassin here?
Some champions are just mobile as part of their design.

Yes that's true, but the ones you chose have limited mobility. For example, mobile katarina? Only useful when you have something to target, same goes for yasuo. Leblanc really is the only one that is close to ahri, but they don't need targets to utilize their kits, they have free range to what they want to do with their mobility while others are left with only partial mobility.
I just hate how people use winrate, pickrate, etc. as a crutch. Hey guys, they don't tell me why she's busted(even better, the how, and the what as well).

Ahri has a stable 53% wr for the past 2 years & a 20% pick rate this season. You compare those numbers to any other champ and you'll see she stands out as being an overly safe generalist who perfoms well even while behind. that said, she's unlikely to be nerfed as she doesn't have a high ban rate which is riot's flag for a champion being "unhealthy." Ahri, even while extremely behind, is far too good at kiting so she doesn't feed which allows her to come back in the mid and late game with her ability to set/extend cc chains all while keeping decent dps. She is only countered by heimy 47.85%, fiddles 48.17%, annie 49.17% and zilean 49.76%(Ahri's wr against them). Every other mid laner she has a greater than 50% wr against in plat+ play. Ahri is the most played mid laner, has the 2nd highest wr, and has the 7th lowest player base games average. As in this isn't a niche of Ahri mains making these numbers but just typical players. She may as well be the omniknight of league because outside of 5.62% of the time (based on the pick rate of her fairly insignificant counters) you're making a mistake not picking her mid. Hey, what i wanted to play got counter, I'll go Ahri. Hey, I don't want to be counter picked, i'll go Ahri cause it isnt' going to happen and if it somehow does it won't be a hard counter. If you don't want to play ahri your champ has harder counters demanding the ban. She's flying under the radar while the numbers are screaming this bitch is too good at being a generalist(or at kiting depending on where you want the nerf to fall).
Though I suppose I didn't hit your question on the head.... You can't dependably gank her early game(she'll e the mid or the jungler) or kill her post level 6 and she zones the majority of mid champions all while being good enough that even if you do dominate her in lane she can recover it mid game. She, for a squishy, eats alot of resources for little reward...

are also tough to gank, also there's a magical thing called "banning"
But in all seriousness, how is she considered even remotely op? I don't see anyone bitching about
maintaining a very solid win rate since her rework.
Banning isn't valid when she isn't even in the top 3 for her lane, especially once you account for the necessity of counter banning. Additionally fiora's winrate hasn't been past 52% since december 2015.
There's some graphs so you can actually get the point.
Ahri is quite literally the only champ to have a 53% winrate since season 5. The OP asked "what do people mean ahri's too tough to beat," and that was the answer. Aside from that though, Ivern is actually more of a problem as his win rate has been greater than 52.5% since late November and has been 55% for over a month.
I think it is winrate envy.
People don't want to beat her in lane, they want to force shitty dives on her and complain that she gets away too easy.
